"Apfelstrudel" with vanilla sauce

"This Apfelstrudel is a fruity-exotic dessert. The  sweet apples in combination with pistachios and goji berries is the happy end of all dinners."

super easy - serves 4

30 - 45 min 



Strudel dough:

200g flour

100ml water

35ml oil

pinch of salt

125g butter (to spread)



Put the flour in a bowl and make a trough.
Add the oil, water and the pinch of salt to the flour.
Mix everything from the inside to the outside with one hand and knead the dough.
Wrap the finished dough into cling film and allow to rest for 30 minutes.



4 apples

80g walnuts

60g pistachios

20g goji berries

3TB cinnamon-sugar


Wash the apples, remove the core, quatering and cut it into thin slices.

Chop the Walnuss and give it with the pistachios and goji berries to the sliced apples.

Mix the apples with the cinnamon-sugar and let them brief.


Stir the dough thinly with a rolling pin and pull it over the back of the hand.

The dough should be not about 1 mm thick.

Place the dough on a tea towel, which makes it easy to roll up.

Give the apples on the front third of the dough.

Spread the remaining dough with liquid butter.

Carefully roll up the strudel and place him on a greased sheet.Bake the strudel in a preheatedoven at 190 °C for appr. 20 minutes.

Vanilla sauce:

6 egg yolk

1 Vanille pod

60g sugar

400ml milk


Cut the vanilla pod of the length and scrape the Vanille out.
Boil the milk with the vanilla and the scalded pod.
Beat egg yolk with sugar until frothy.
Whip the egg yolks on a water bath, carefully add the milk slowly, and pull it into the "rose" (until a bond is formed). Important here is the whole time to stir.
When the desired bond is formed, brush through a hair strainer and stir in a cold water bath.
