Fruity couscous with glazed carrots and spring onions

Ingredients

Method


Couscous:

400g couscous

450ml orange juice

1tb extra virgin olive oil

pinch of salt

-> coriander, mint, parsley

Put the Couscous in a bowl.

Bring 400ml orange Juice and a pinch of salt to boil.

Give it over the Couscous, stir it with a spoon and cover with aluminium foil and let it swell.

Chop coriander, mint and parsley and lift under the swollen Couscous.

To serve heat the Couscous with  50ml orange juice and the olive oil carefully in a pot. 

 



Glazed carrots with spring onions:

250g little carrots

2 bunches of spring onions

2 tablespoons of honey or agave syrup

30g butter

Peel the carrots and blanch it briefly.

Remove the root at the spring onions, wash and cut a bit from the end.
Dissolve the butter and honey in a pot.
Add the carrots and spring onions in the pot and let it glaze for about 2 minutes.
