Pumkinsoup with coconut milk

Ingredients

Method


Soup:

1 Hokkaido pumpkin

2 Onions

10g Ginger

2 Apples

1 Banana

150ml Orange juice

150ml Coconut milk

½ Chili

70ml White wine

1l Vegetable stock

Oil

1tb honey

Wash the pumpkin, cut into halves and remove the cores.
Cut the pumpkin into thick pieces.
Peel onions and ginger.

Cut the onions in cubes and chop the ginger finely.
Remove apple core, peel the banana and cut into thick pieces.

Sauté pumkin with oil gold-brown in a pot.
Add onions, ginger, apples and banana.
Whipe off with white wine and orange juice.
Fill up with vegetable broth and coconut milk and let boil until the pumpkin is soft.
Puree the soup with a blender.
Tasting with salt, pepper, honey and Chili.
