Quiche with yello tomatoes, bell pepper, red onions, roasted pistachios and fresh ruccola

not too tricky- serves 4

Ingredients

Method


dough:

400g flour

100g durum wheat semolina

1/2 tb yeast

1/2 tb salt

100ml water

120lml wheat beer

140ml olive oil

1.)

Put everything in a mixing bowl and mix with kneading hooks.
Close the dough air seal and let it rest for 2 hours in the refrigerator.
Roll the dough thinly and place in a greased quicheform.



filling:

400g yello tomatoes
2 red onions
2 bell pepper
30g pistachios
ruccola
-> rosemary, thyme

4 eggs

220ml cream

Peel onions and cut into small cubes
Sauté red onions and bell pepper in a pot.
roasting  pistachiosin a pan .

Add the pistachios and herbs to the onions and bell pepper.
Allow the vegetable-mix to cool down and spread in the quichform.
Whisk the eggs with cream and flavor with salt and preffer.
Add the egg cream mixture over the vegetable-mix.

Give the quiche  for about 35 minutes, at 185°C, in the oven.
